Sun-dried tomatoes make a great addition to this sauce, and the prawns can be swapped out for mushrooms that have been sautéed prior to stirring through with some freshly chopped parsley. Make it your own!
Melt the butter in a skillet over medium heat and sweat off the shallot and garlic until translucent.
Add the stock/wine and simmer until reduced by half.
Add the double cream, Italian Stallion seasoning, lemon juice and a good scrunch of black pepper and simmer for a minute or two until the sauce has thickened and coats the back of a spoon. Have a taste to check seasoning.
Add in the prawns and heat them through before serving.
