
“The General” Memphis Ribs

Ingredients:
Meaty Rack of Ribs - 1 rack per person
1 tub - The General Tex Mex BBQ Rub
Jar of Bitboss BBQ sauce
Method:
“The General” is the boss of general purpose rubs and works so well on ribs, we decided on Memphis style dry rub only ribs, dipped into Angus & Oink Pitboss BBQ sauce. A rack of ribs will feed a person, you need to ask your butcher for some meaty spare ribs. Set your smoker or BBQ up for indirect smoke with hickory or pecan smoke at 110 deg C. Sprinkle the ribs generously and evenly with “The General” around an hour before they go on the smoker. Smoke for 3 hours with the dry rub only, then wrap with foil, spritizing with apple juice for a couple of hours until the ribs are softening up. Place back on the smoker without foil for the crusty bark to harden up again should take 20 minutes. Serve with generous Pitboss BBQSauce to dip the ribs in, and eat with your fingers.
