This dish is flavoursome and incredibly easy to make, it would be rude not share this with your mates over the bbq this summer. Marinated mutton chops are grilled over a hot flame and served with mixed grains, rocket and plum tomatoes. Served with a pinch of gremolata and a glass of vino, this is the perfect summer meal.
Ingredients

12-16 Mutton Chops

800g Merchant Gourmet Italian Mixed Grains

250ml White Wine

tbsp Angus & Oink Italian Stallion

2 tbsp Olive Oil
-
4 slices Fresh Lemon
-
2 Bay Leaves, ripped

2 tsp Peperoncino flakes

Handful Rocket
-
Handful Plum Tomatoes, sliced

1 garlic clove
-
2 tbsp Parsley, finely chopped

Zest of 1 Lemon
Directions
Place the mutton chops in a freezer bag and add the wine, olive oil, bay, peperoncino, lemon and Italian Stallion seasoning. Seal the bag and ensure the meat is coated before popping in the fridge overnight.
Remove the chops from the fridge and bring to room temp. Fire up your grill outdoors, or use a cast iron griddle on your hob and grill the chops 2-3 minutes either side depending on size).
Warm up the mixed grains for a few minutes then toss through some rocket and chopped tomatoes. Make the gremolata by mixing parsley, garlic clove and lemon zest together.
To serve, spoon the grains onto a plate. Lay the grilled chops on top and garnish with gremolata.
