Serves: 4–6
Time: ~45 mins

Ingredients

For the Meatballs

  • 450g minced beef
  • 2 tbsp Angus & Oink Slice Slice Baby Pizza Seasoning

For the Ragu

  • 1 red onion, finely diced
  • 1 white onion, finely diced
  • 1 red pepper, finely diced
  • 250g mushrooms, chopped
  • 200g cherry tomatoes
  • 1 carton chopped tomatoes (400g)
  • 500ml beef stock
  • 100g grated cheddar or mozzarella (or a mix!)
  • 2 tbsp Major Tom Ragu Seasoning
  • Handful of fresh parsley, chopped
  • Olive oil, for frying

Method:
Make the Meatballs

In a large bowl, mix the minced beef with 2 tablespoons of Pizza Seasoning using your hands until fully combined.
Shape into meatballs, a heaped teaspoon will give you bite-sized balls, a tablespoon for something bigger. Place them on a plate and set aside.

Prep the Ragu Veg

Finely dice the onions, red pepper, and mushrooms. Halve the cherry tomatoes. Gather all your ingredients to make cooking smooth and stress free.

Sear the Meatballs

Heat a little olive oil in a heavy based pan over medium-high heat. Once hot, add the meatballs and sear until browned all over. Shake the pan occasionally to turn them. Remove with a slotted spoon and set aside.

Build the Ragu

In the same pan, add the chopped onions and pepper. Sauté for around 5 minutes until softened. Add the cherry tomatoes and mushrooms, cooking for another 5 minutes.

Stir in 2 tbsp of Major Tom Ragu Seasoning, followed by the chopped tomatoes and beef stock. Give it a good mix and let it simmer for 5 minutes.

Simmer Everything Together

Return the meatballs to the pan. Simmer for 15 minutes, letting the sauce thicken and the flavours develop. Ensure the meatballs are cooked through.

Add Cheese & Finish

Sprinkle the grated cheese over the top and cook for a final 5 minutes until it’s melted and bubbling. Finish with chopped fresh parsley.

🍽️ How to Serve
