Apple Upside Down Cake

Turn your cake game upside down, literally, with this delicious twist on a classic apple cake. A&O Meat Tinsel delivers a sweet and spicy autumnal hit to every bite, whilst the sticky caramelised apples are an epic contrast with the softly spiced sponge. Perfect with a coffee, a dollop of cream, or just straight from the tin.

For the cake:

  • 1½ cups plain flour
  • 1 tbsp A&O Meat Tinsel
  • 1 cup sugar
  • 1½ tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla
  • 80g melted butter

For the topping:

  • 50g butter, melted
  • 1 tbsp A&O Meat Tinsel
  • Pinch of salt
  • 2 apples, peeled and thinly sliced
  • Icing sugar, for dusting

Directions

  1. Preheat oven to 180°C and grease a 9-inch cake tin.
  2. Make the topping: pour the melted butter into the bottom of the tin, sprinkle over the A&O Meat Tinsel, and arrange the apple slices on top.
  3. In a bowl, whisk together the flour, A&O Meat Tinsel, sugar, baking powder, and salt. Add eggs, milk, vanilla, and melted butter, mixing until smooth.
  4. Pour the batter over the apples and spread evenly.
  5. Bake for 45–50 minutes until golden and a skewer inserted into the centre comes out clean.
  6. Allow to cool for 10 minutes, then flip onto a plate. Cool completely and dust with icing sugar before serving.
