Baharat Hassleback Butternut Squash

Scored Hasselback style and smothered in our fragrant blend of Baharat, ginger, and garlic, it's oven-roasted to golden, caramelised perfection. Finished with creamy feta, juicy raisins, and crunchy pine nuts over a fresh bed of salad leaves, mint, and coriander, this dish is as stunning as it is satisfying. Perfect as a hearty main or standout side.

ingredients

  • 1 Butternut Squash
  • 100ml Olive Oil
  • 2 Tbsp Baharat Seasoning
  • 1 Tsp Garlic Puree
  • 1 Tsp Ginger Puree
  • 100g Feta Cheese
  • Handful of Raisins
  • Handful of Toasted Pine Nuts
  • Bunch of Mint and Coriander

Directions

  1. Preheat oven to 180°
  2. Slice squash in half lengthways and remove seeds.  Slice across the squash about 80% through as many times as possible.
  3. Combine Baharat Seasoning, ginger and garlic with the oil to form a paste and coat the
    squash.
  4. Place on a baking tray in the centre of your oven for 45 minutes - 1 hour.
  5. Once cooked, garnish with raisins, feta and pine nuts on a bed of salad leaves, mint and coriander.
