Breakfast Tacos

Tacos are the food of the gods. So many tacos, there is not enough time so lets have some from breakfast and max the taco all day long! These use our Huevos Rancheros sauce and the two salsas.

ingredients

For the sauce:

  • 1 clove garlic
  • 1 large bell pepper
  • 1/2 red onion
  • 1 can chopped tomatoes
  • 5 baby tomatoes
  • 1 can black beans
  • 1 tsp A&O The General

For the topping:

  • Corn tacos
  • Fried egg
  • Salsa Roja
  • Smoked Corn Salsa
  • Bacon!!!
  • Fresh Herbs
  • 1 lime

Directions

So yesterday we made Huevos Rancheros but had a load of sauce left! No worries.. we'll have breakfast tacos today.

  1. Fry two eggs how you like them and two slices of thick bacon. Heat up the sauce. Warm the tacos, we use the toaster for that.
  2. Spoonful of ranchero sauce onto the doubled up tacos.
  3. Place egg on top and sprinkle with A&O Mexican rub.
  4. Spoon some salsa rojas on one egg and smoked corn salsa on the other.
  5. Add bacon, add lime, add chilli, add coffee....viva Mexico!!!
