Butter Bean, Sausage & Kale Casserole

A winter warmer, this Butter Bean, Sausage & Kale Casserole is a wholesome, hearty dish that brings together simple ingredients for maximum comfort. Protein-rich butter beans and sausage create a filling base, while fresh kale adds colour and nutrition. Everything is cooked with our Garlic Butter Seasoning, making it rich, flavourful, and perfect for soaking up with crusty bread, or enjoying with some extra greens on the side. It’s easy to prepare and uses just one pan.

  • Drizzle of chosen oil
  • 1 clove garlic, minced
  • 1 onion, diced
  • 1 tsp Garlic Butter Seasoning
  • 8 sausages (pork, chicken, or veggie)
  • 2 tins (400g each) butter beans, drained and rinsed
  • 200g kale (washed, stems removed)
  • 200ml chicken or vegetable stock
  • 1 tin chopped tomatoes (400g)
  • 2 tsp tomato purée
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • Parsley, chopped (to serve)

Directions

  1. Preheat oven to 180°C (350°F).
  2. Start the dish on the stove in a large ovenproof pan or skillet. Begin by heating up your oil to a medium heat, adding garlic and onion, cooking until soft and sticky (5–10 min). Add Garlic Butter Seasoning and smoked paprika and mix through.
  3. Add sausage chunks and cook until browned on all sides.
  4. Stir in butter beans, kale, chopped tomatoes and tomato purée. Season to taste with salt and pepper.
  5. Pour in the stock, stir well, and let simmer for 5 minutes.
  6. Transfer to the oven (or cover with foil if using the same skillet) and bake for 20 minutes, until the kale is tender and flavours are combined. Top with fresh parsley and black pepper.
  7. Serve hot with crusty bread for dipping.
