Cheesy Garlic Bread

Garlic bread supremacy. 🧄🧀 Crispy edges, molten middle, zero leftovers.

ingredients

1 whole head of garlic
2 tablespoons olive oil (plus extra for drizzling)
½ teaspoon salt
1 loaf crusty bread (French or Italian works beautifully)
4 tablespoons unsalted butter, melted
1 tablespoon Rich Belgian Garlic Butter (from Mangoes & Onions)
1 to 1½ cups shredded cheese (mozzarella, cheddar, or a blend)
2 tablespoons fresh parsley, chopped

Directions

Preheat oven to 400°F (200°C).

Slice the top off the whole head of garlic to expose the cloves. Drizzle with olive oil, sprinkle with salt, wrap tightly in foil, and roast for 15 minutes until soft and fragrant.
Slice your loaf into even pieces. Set aside.
Once the garlic is cool enough to handle, squeeze the softened cloves into a bowl. Mash with a fork until smooth.

Add melted butter, 1 tablespoon olive oil, and the Rich Belgian Garlic Butter. Stir until combined.
Mix about half of the shredded cheese into the garlic butter mixture.
Spread the garlic cheese mixture generously onto each slice of bread.

Top with remaining shredded cheese and sprinkle with chopped parsley.
Drizzle lightly with olive oil. Wrap the bread loosely in foil and bake for 10 to 15 minutes until the cheese is melted and bubbly.
For extra golden tops, open the foil during the last 2 to 3 minutes.
