Chicken Chorizo Baguette

A loaded baguette packed with smoky chicken, spicy chorizo and A&O El Jefe. Grilled until golden and topped with melted cheese, it’s finished with fiery sauces and crunchy toppings for a sandwich that’s frickin’ lush and seriously addictive.

  • 250g minced chicken
  • 1 tbsp A&O El Jefe rub
  • ½ cooked chorizo, finely chopped
  • 3 spring onions, finely chopped
  • Pinch of salt
  • Cracked black pepper
  • 1 baguette, sliced lengthways
  • 50g cheddar cheese, grated
  • Sriracha mayo, to drizzle
  • Sriracha, to drizzle
  • Crispy chilli and crispy onions, to top

Directions

  1. In a mixing bowl, combine the minced chicken, A&O El Jefe rub, chopped chorizo, spring onions, salt, and pepper. Mix thoroughly.
  2. Slice the baguette in half lengthways. Press the chicken mixture into the cut side of the top half of the baguette, spreading evenly along its length.
  3. Heat a medium-hot pan and grill the chicken-topped baguette (chicken side down) for 3–4 minutes, or until browned (cook longer if the topping is thick).
  4. Transfer to a baking tray, chicken side up. Sprinkle with grated cheddar and place under a hot grill until the cheese is melted, golden and crispy.
  5. Finish with sriracha mayo, sriracha, crispy chilli, and crispy onions. Serve immediately — and don’t feel like sharing.
