
Chicken McMuffin Sandwich
Well take a look at this absolute Whopper! We're not sure whether this should be breakfast, lunch or dinner?
Ingredients
Chicken Patties
- 500g chicken mince
- ½ tsp ground sage
- ½ tsp ground thyme
- ½ tsp onion powder
- ½ tsp garlic powder
- 4 tbsp. panko
MacD Sauce
- 2 x tsp Mac Daddy seasoning
- 4 tbsp. Mayo
- Swig of pickle juice
Muffins
- 3 breakfast muffins
- 3 eggs
- 6 slices American cheese
Method
- Set up your BBQ for direct grilling over a medium heat.
Chicken Patties
1) Mix Sausage Patty ingredients in a bowl – get your hands in and make sure it’s well combined
2) Shape into 6 patties slightly larger than the muffins as they will shrink during grilling
3) Add patties to the grill. Cook on the first side for 2-3 minutes. Flip, add cheese and grill for another 2-3 minutes or until the patty has cooked through
MacD Sauce
1) Add all ingredients to a bowl and mix
Eggs
1) Heat a skillet on the grill with a little oil
2) If using egg rings give them a brush with some oil
3) Crack eggs into rings/skillet and cook for a minute
4) Add around 2 tbsp water to the skillet and cover with a lid/foil and cook for a further 2-3 minutes until the eggs are to your liking (mine were runny)
Muffins
1) While the eggs are cooking split and toast the muffins on the grill
Assemble
1) Spread the muffin bottom with MacD sauce. Top with double cheesy chicken patties, egg and the muffin lid spread with more MacD sauce
2) Tuck in and remember a napkin
