Creamy Italian Shrimp Sauce

"This versatile sauce is packed full of flavour and pairs really well with fish, steak, chicken or even pasta and baked potatoes. It’s incredibly simple to make and can be knocked up in just a few minutes.

Sun-dried tomatoes make a great addition to this sauce, and the prawns can be swapped out for mushrooms that have been sautéed prior to stirring through with some freshly chopped parsley. Make it your own!

  • 1 tbsp Butter
  • 1 Shallot, very finely chopped
  • 2 Garlic Cloves, minced
  • 100 ml Vegetable Stock or white wine
  • 200 ml Double Cream
  • 1 - 2 tsp A&O Italian Stallion seasoning
  • 1 Lemon, juiced
  • Freshly Ground Black Pepper
  • 225g Cooked King Prawns

Directions

  1. Melt the butter in a skillet over medium heat and sweat off the shallot and garlic until translucent.
  2. Add the stock/wine and simmer until reduced by half.
  3. Add the double cream, Italian Stallion seasoning, lemon juice and a good scrunch of black pepper and simmer for a minute or two until the sauce has thickened and coats the back of a spoon.  Have a taste to check seasoning.
  4. Add in the prawns and heat them through before serving.
