Crunchy Chicken Nuggets

Nuggets every damn day of the week? When they’re THIS good, it’s gonna be hard to say no. Rubbed in our Feather Duster seasoning and rolled in crispy cornflakes, they crisp up to perfection, bringing hints of paprika, lemon and chipotle to the fore. We serve them with a Feather Duster mayo for a creamy, spicy dip. It’s chicken nuggets, but better.

ingredients

  • 2 large eggs, beaten
  • 1 cup milk (for dipping)
  • 650g chicken thighs, cut into bite-sized pieces
  • 3 tbsp Feather Duster seasoning
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs 
  • 2 cups of cornflakes, bashed slightly 
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten
  • 1 cup milk (for dipping)

Directions

  1. In a bowl, add the eggs, milk and chicken with 1 tbsp of Feather Duster seasoning. 
  2. In a separate bowl combine the flour, panko breadcrumbs, cornflakes, parmesan and remaining 2 tbsp Feather Duster seasoning. 
  3. Place each piece of soaked chicken in the breadcrumb mix, pressing down to thoroughly coat, then move to a plate. 
  4. Cook in a pan (around 3-4 minutes per side) or in the air fryer (10-12 minutes) until golden and the juices run clear. 
  5. Serve with a Feather Duster mayo and pickles, with some chips on the side if you fancy.
