Dirty Guacamole & Beef Faijtas

Tacos so dirty you wont be able to wash your face afterwards!! That's eating with your face off!! We smoke the pig cheeks first and dice into cubes before panko coating and deep frying for CRUNCH!!

ingredients

For the fajitas:

  • 1 Kg skirt steak
  • 30g A&O The General Rub
  • 4 bell peppers
  • 2 red onions
  • 4 cloves garlic
  • 12 small wraps
  • fresh coriander
  • 1 lime

For the dirty guacamole:

  • 10 baby tomatoes
  • 2 ripe avocados
  • 4 cloves garlic
  • 30g Fresh Coriander
  • Juice of 1 or 2 limes
  • Salt & pepper

Directions

We cooked this over charcoal with a little wood smoke added from a stick or two of cherry. But you can do this on a gas bbq or even on a grilling skillet in the kitchen.

  1. First off, cut the peppers in half and remove the seeds.
  2. Cut the red onions so that you have concentric rings in slices.
  3. Once the coals are hot, char the peppers so the skin blisters.
  4. Allow to cool and the skin just peels off easily. Get some colour on the onions.
  5. In a cast iron pan, put the peeled garlic and cherry tomatoes in with a drizzle of olive oil.
  6. Cook down until the garlic gets some golden colour and the tomatoes soften. We'll use these for the guacamole!
  7. With the coals nice and hot, grill the steak for a lovely crust and browning.
  8. Once its nearly cooked, shake The General rub over the hot meat and then flip over the flames to finish. You don't want to burn the rub, just colour it slightly.
  9. In a bowl add diced avocado, fresh coriander, lime juice, finely diced red onion.
  10. Then from the grill add the softened tomatoes and chop the garlic into the bowl. This gives a wonderful depth to the guacamole!!
  11. Season to taste with salt and pepper.
  12. Slice the steak after a rest, warm the tortilla wraps, slice the peppers and dig in!!
