We brought a little bit of little bit of Mexico home with us. Even after being home from our travels a few weeks we couldn't stop thinking about this delicious dish we had tried in a few different spots in Mexico and it never failed to deliver on epic taste!

This is proper hangover cure material. But your don’t need a hangover to enjoy this, these also make a great Saturday night (sharing)* snack!

FOR THE SAUCE

  • 1 Tin Tomatillos
  • Small Bunch Coriander
  • 1 Diced White Onion, par cooked
  • 1 Tbsp El Jefe Mexican Seasoning
  • Water
  • Tortilla Chips

TOPPINGS

  • 1 Avocado - Sliced
  • Sour Cream - 100mls
  • Chorizo Chunks 50g
  • Coriander
  • Sliced red onion
  • Sliced Chilli
  • Fried Egg - optional!
  • Soft white bread roll, to turn this into an epic sango!

Directions

TO MAKE THE SAUCE (SALSA)

  1. Blitz all the ingredients together and add a little water as necessary
  2. Add a ladle of sauce to a frying pan and heat
  3. Add the tortilla chips and more sauce on top
  4. Stir up until the tortillas are softening but not soft
  5. Decant to plate and dress with avocado, sour cream, chorizo, fried egg optional, coriander, extra chilli, sliced red onion. A sprinkle of Chilli Lime seasoning on top and you’re good to go!

Recipe Note

Add this mix to a soft white bread roll with brisket for maximum pleasures. Consume with beer!
