ExoMas Turkey Burger

ExoMas Turkey Burger

Using excess pork stuffing and minced turkey.

This warming and giant turkey burger could possibly replace the roasted beast this year…

ingredients

FOR THE BURGER

  • Turkey mince 130g(ish)
  • Stuffing mix or pork sausages 80g(ish)
  • 2 tsp of Exodust Rub
  • Smoked Streaky bacon, 12 rashers approx

FOR THE GLAZE

  • 1 tbs cranberry sauce
  • 1 tbs maple syrup
  • Splash of boiling water
  • Splash of pineapple rum

FOR THE SLAW

  • 2 tbs pickled/spiced red cabbage
  • 5 Brussel sprouts finely chopped
  • 1 tsp of crème fraice
  • Splash of cider vinegar
  • Splash of pineapple rum
  • Good pinch of sea salt
  • Burger Bun

Directions

FOR THE BURGER

  1. Combine all the burger ingredients, apart from the Bacon, in a bowl.
  2. Gently press the mixture into a patty and weave the bacon on top
  3. Pop in the fridge for 20 minutes and get your BBQ started if using!
  4. Either indirect on a bbq at about 150° with a block of cherry wood or in an oven. Glaze through the cook, until internal temp hits 73°c. 

FOR THE GLAZE

  1. Combine all ingredients and be sure to glaze the burger throughout the cook
  2. To make the Mayo: Combine the Mayo, Brown Sauce & Exodust Rub
  3. For the slaw: Combine all the ingredients in a blow and leave to the side until ready to servce!

ASSEMBLE THE MONSTER BURGER:

  1. Lightly toast your buns, then add Slaw, The Burger and top with the mayo and some crispy onions if you have! Grab a few napkins and enjoy!!

Recipe Note

It’s a monster so probably best to have for breakfast, with a shot of rum.
