Fresh Miso Ramen Rolls

Something a little different to do with the Festive Leftovers! These fantastic Fresh Miso Ramen Rolls are going to be a great snack for your Boxing Days Gues

ingredients

FOR THE FRESH ROLLS

  • Rice Paper Wrappers
  • Leftover turkey finely chopped
  • Leftover ham finely chopped
  • 7 or 8 Sprouts grated
  • One medium size, carrot, grated
  • One handful of kale, chopped up
  • Bunch of spring onions, chopped into fine pieces plus extra for garnish
  • 1 tablespoon of miso Ramen
  • 2 1/2 tablespoons of side of vinegar
  • 2 tablespoons of light, soy sauce
  • 1 tablespoon of fish sauce
  • One tablespoon of Sesame, oil
  • Season to taste.

FOR THE DIPPING SAUCE

  • 2 tbs cider vinegar
  • 2 tsp miso ramen
  • 1 tsp sugar
  • 1 tsp fish sauce
  • 2 tbs water
  • 1 tsp sesame oil

Directions

  1. Prep all the filling as per ingredients list
  2. Soak the individual rice paper wrapper in warm water for 12-14 seconds and pat dry before filling

HOW TO WRAP A ROLL

  1. Start by placing a few pieces of kale about one-third of the bottom of the circular wrapper. The width of your fillings will determine the width of the spring roll. You want to leave a couple inches open on the two sides for wrapping purposes
  2. Then, add the remaining ingredients. The exact order doesn’t matter much. Just pile them on top, making sure to take up the proper width. It’s ok if the fillings spill upward. I try to leave the top one-third of the wrapper open for wrapping.
  3. Gently pull the bottom of the wrapper up and over the lower portion of the filling. Try to keep the fillings compact as you roll upwards, just until the fillings are enveloped.
  4. Pull each side over to enclose the filling. Continue wrapping upward until your spring roll is fully wrapped!

FOR THE DIPPING SAUCE

  1. Combine all the sauce ingredients, if possible leave to the side fro 20 minutes to allow all the flavours to infuse together!

Recipe Note

Spring rolls can seem intimidating, but you’ll get the hang of it quickly, I promise. If you have folded a burrito before, you can definitely make spring rolls! Don’t stress if your spring rolls aren’t totally perfect
