Hella Nashty Burger

This easy southern fried staple is a breeze to make yet packed with punchy flavours. We marinate for 12 hours and double coat in Hella Nashty before frying – giving these burgers an insane level of flavour! Don’t be tempted to skip the spiced mayo – it brings a creamy texture into the fold that’s a killer combo with the crispy chicken and crunchy slaw.

ingredients

Marinade:

  • 350g chicken thighs
  • 80ml buttermilk
  • 2 heaped tbsp Hella Nashty seasoning
  • Juice of half a lemon
  • 2 garlic cloves sliced

For the flour mix:

  • A cup flour
  • 2 heaped tbsp Hella Nashty seasoning

Slaw:

  • 1 cup of each: shredded red cabbage, white cabbage, carrot
  • Large pinch of salt and pepper
  • 3 heaped tbsp mayonnaise
  • Squeeze of ¼ of a lemon

Mayonnaise:

  • 4 tbsp mayonnaise
  • 1.5 tsp Hella Nashty Seasoning 
  • Squeeze of lemon juice

To serve:

  • 2 brioche burger buns
  • Pickled gherkins

Directions

  1. Combine the marinade ingredients together in a bowl and add the chicken. Toss to thoroughly coat and place in a Ziplock bag in the fridge for a minimum of 12 hours.
  2. Make the flour mix on a plate.
  3. Remove the chicken from the bag and allow the excess to drip off. Coat each of the chicken thighs thoroughly in the flour mix. Place back in the bag of marinade and shake vigorously. Place the chicken back into the flour mix and toss to fully coat. 
  4. Set your air fryer to 200F (or deep fryer to 180F) and cook the chicken on a high heat for around 12-15 minutes until the juices run clear, the skin is crispy and it’s reached an internal temperature of 165F. 
  5. Make the slaw: mix the shredded veg with the mayonnaise and lemon and season. Mix the mayo ingredients together in a separate bowl.
  6. Toast the burger buns in a pan, then load them up with the mayo, pickled gherkins, chicken burgers and slaw.
