Hella Nashty Halloumi Fried Chicken Burgers

This epic burger has got a bit of everything going on. Crispy, spice-loaded fried chicken, grilled halloumi for that extra flavour hit, and a bold, Hella Nashty ketchup, all stacked in a toasted bun. Crunchy white cabbage slaw brings the freshness, but the heat? That’s all in the spice. 

ingredients

  • 1 cup buttermilk
  • 4 chunky chicken breasts
  • 100g plain flour
  • 2 tbsp Hella Nashty seasoning
  • 1 pack of halloumi
  • 2 burger buns
  • Pickles
  • Lettuce

For the slaw:

  • 250g white cabbage, thinly sliced
  • Dash of white wine vinegar
  • 1 tbsp olive oil
  • Salt & pepper

For the ketchup:

  • 3 heaped tbsp of ketchup
  • 2 tbsp Hella Nashty seasoning

To serve: Pickles & lettuce, drizzle of mayo

Directions

  1. Heat the deep fat fryer to 175C/350F
  2. Place the chicken in a bowl with the buttermilk.
  3. Tip the flour and 1 tbsp Hella Nashty into a separate bowl.
  4. Dip the buttermilk coated chicken breasts into the flour mixture and place on a plate ready to cook.
  5. When the fryer is hot enough, lower the chicken breasts into the hot fat, cooking until golden brown and crispy, around 8 minutes. 
  6. In a bowl, mix all of the ingredients together for the slaw. Mix the Hella Nashty seasoning into the ketchup and set aside.
  7. Cook the halloumi in a pan or on the grill until brown and crispy on the edges.
  8. Plate up - place the buns on a tray, drizzle over some mayo, add slaw, pickles, halloumi, crispy chicken, a good drizzle of the ketchup and lettuce.
  9. Serve on trays al fresco style with an ice cold beer.
