Huevos Rancheros

Breakfast massive!! Mexicans are known for stocking up for the day with breakfast and this dish is so tasty you'll want to get up outta bed for it. With beans, tomato, avocado, cheese and eggs its also a great low carb alternative!

ingredients

  • I clove garlic
  • I large bell pepper
  • 1/2 red onion
  • I can chopped tomato
  • 5 baby tomatoes
  • I can black beans
  • I tsp A&O The General
  • For the topping Crumbled cheese like feta Sliced Avocado Fresh Coriander
  • Chopped chives
  • Fresh red chilli pepper

Directions

  • Select a non stick pan, add garlic, red onion, red bell pepper and cook until soft.
  • Add the chopped tomatoes and can of black beans with The General rub or A&O Mexican rub.
  • Cook down for 15 minutes adding the halved cherry tomatoes in the last 5 minutes.
  • Spoon the sauce into a skillet and create a little well for the eggs.
  • Cook on the hob for 5 minutes until bubbling and then into the oven for 10 mins until the yokes are as you like them.
  • Sprinkle with crumbled cheese, chopped fresh herbs and add the sliced avocado. Dig in!!
