Hunter's Chicken

When the nights draw in and comfort food calls, this smoky, cheesy pub classic delivers in spades! We’ve taken tender chicken breast, wrapped it in streaky bacon, seasoned it with our punchy Pigasus rub, and drenched it in Red House BBQ sauce for that deep, sticky finish. Topped with a bubbling mix of cheddar and mozzarella, it’s everything you want from a winter warmer. 

Keep it simple and serve with chunky chips, green peas, and a sprinkle of fresh herbs for colour.

  • 4 Chicken breast fillets
  • 12 smoked streaky bacon rashers
  • 2 tbsp Pigasus seasoning
  • 200g Red House BBQ Sauce
  • 2 packs mozzarella cheese
  • 200g grated parmesan cheese
  • Chunky oven chips and garden peas to serve

Directions

  1. Preheat the oven to 200C/180C (Fan)
  2. Place the chicken in a baking dish and sprinkle over the Pigasus seasoning, then wrap each breast with the streaky bacon - adding another hit of seasoning if you like. Place in the hot oven to cook for 25 minutes until the chicken is thoroughly cooked through.
  3. Nestle in the mozzarella, drizzle over the Red House BBQ sauce and sprinkle over the parmesan. Return to the oven for a further 8-10 minutes until everything is bubbling together nicely.
  4. Serve with cooked oven chips and peas (plus any remaining BBQ pan juices drizzled over the top).
