Italian Stallion Panuozzo

Stuffed Panuozzo with ricotta, ham & some of our Italian Stallion seasoning— hot, blistered, and ready to devour.

ingredients

For Panuozzo:

  • 500g Strong White Bread Flour
  • 290ml Lukewarm Water
  • 7g Fast Acting Yeast
  • 1 Tsp Salt 

For Filling:

  • 1 ½ Tsp Italian Stallion Rub
  • 100g Ricotta
  • Italian ham of your choosing – we used Parma ham
  • Rocket Leaves
  • Olive Oil for drizzling
  • Salt and Pepper for seasoning

Directions

  1. Combine flour and salt, mix well.
  2. In a separate bowl, add yeast to lukewarm water, mix well and leave for 10 minutes.
  3. Combine wet and dry ingredients and in a food mixer with dough hook or just by hand, mix on
    medium/slow speed for 7 - 10 minutes.
  4. Transfer to a warm place for at least hour until it’s doubled in size.
  5. Once doubled in size, divide into your desired size, this recipe will make 4 – 5 decent sized portions.
  6. Once divided, cover and leave to rise for 25 minutes.
  7. Meanwhile for filling – combine the ricotta and Italian Stallion rub with a drizzle of olive oil, set aside.
  8. Preheat pizza oven or standard oven to as hot as it can go.
  9. Roll out pizza dough and fold in half, transfer to your oven. Turning occasionally until puffy and slightly blistered.
  10. Remove from oven, open like a sandwich, drizzle with olive oil and salt and pepper. Layer rocket, ham and ricotta mixture.
  11. Serve!
