Jerk Chicken Dinner

Jerk Chicken be like a love affair!! Hot and tender, fiery an cool like dat. Cook this on the BBQ for a little char grill or in the oven, either way it's maximum tasty and so easy to make. Rice and beans, a fruity and tangy salsa with a cold brew. be nice on da island jah know!!

ingredients

  • 4 large whole chicken legs
  • 1/2 bottle PitBoss BBQ sauce
  • Sliced fresh chilli & coriander to dress
  • Limes, quartered and squeezed
  • 1 ripe mango, peeled and diced
  • 1/4 cup Pomegranate seeds
  • 1/4 cup Chives, fine chop
  • 1/2 red bell pepper, small dice
  • 2 x spring onions, sliced finely
  • 1/4 cup packed fresh coriander
  • 1 green jalapeño, seeded & fine dice
  • 1 large lime, juiced
  • salt, to taste
  • 1 cup basmati rice
  • 1 tsp salt
  • 1 can black or kidney beans

Directions

  • Trim the chicken as required and place in a large bowl, mix the BBQ sauce and 50g of
    Exodust per Kg of chicken together and 50g/Kg Exodust rub/Kg of chicken plaster all over the chicken. Get it infused!

  • Set aside preferably overnight but an hour will be fine. Set up BBQ for indirect cooking or crack the oven onto 180C. If BBQing add some wood chunks for extra smoke flava!

  • Cook until the chicken is a beautiful colour and proves 165F internal temperature.

  • To caramelise the skin, you can finish under the grill or on a BBQ flip
    the chicken on the coals.

  • For the salsa, peel the mango and slice around the big seed. Dice into 1 cm cubes
    and add to a bowl.

  • Add pomegranate seeds, diced bell pepper, spring onion and diced chilli. Add the lime juice and salt to taste. Dress with the chopped chives and coriander.

  • For the basmati rice, heat a saucepan with a tbsp of oil and stir the rice in, avoid
    burning. Add the hot water to cover only and stir. Watch the steam!

  • Add the salt and cover with a lid, remove from the heat. Wait 30 mins and stir. The rice should be cooked perfectly.

  • Add the drained can of black beans and any chopped coriander, chives and chilli you have left.

  • Squeeze the juice of a lime through the rice. Serve all together with lime wedges, extra
    hot sauce and beer!
