Lechon Pork Belly Bites

We usually serve up our Pork Belly in a BBQ style sauce. This time we have gone for the deliciously fragrant flavours from our Thai Seasoning and then finished up with a generous drizzle of our Thai Sweet Chilli Sauce!

ingredients

FOR THE PORK BELLY

  • 1 small pork belly
  • 1 stalk of lemon grass, smashed.
  • 2 tsp black pepper corns
  • 3 Bay leaves 
  • 2 tbsp dark soy sauce
  • 1 tbsp of Thai rub
  • 1 star anise 
  • 3 tsp salt
  • 1.2 litre of water 

TO SERVE

  • Spring Onions
  • Chilli Flakes
  • Thai-ger style Chilli Sauce

Directions

  1. Combine all the ingredients For The Pork Belly in a pan, ensure the Pork Belly is completely submerged.
  2. Bring to a boil and simmer for one hour.
  3. Remove from water, pat dry, score skin and rub in sea salt
  4. Place uncovered in a fridge for 4 - 24 hours to dry further
  5. Air fry for 40 mins at 230°C turning half way
  6. Cut into chunks, drizzle with sauce and serve
