Lemon and Garlic Roast Chicken

A fragrant and juicy whole chicken infused with tangy lemon and savoury garlic, perfectly roasted with a medley of root vegetables. This comforting dish combines the rich flavours of Angus & Oink Garlic Butter Seasoning with fresh thyme, creating a delicious centrepiece for any family meal or festive gathering.

ingredients

  • 1 whole chicken (2kg)
  • 2 tbsp olive oil
  • 3 tbsp Angus & Oink Garlic Butter Seasoning
  • 1 lemon, sliced
  • 6 garlic cloves 
  • Fresh thyme sprigs
  • Mixed Root veg (we’ve used carrots, turnips and beetroot)

Directions

  1. Rub chicken with oil and Angus and Oink Garlic Butter seasoning.
  2. Dust Root veg, garlic and lemon slices with olive oil, Angus and Oink Garlic Butter seasoning and mix
  3. Place the chicken on top of the root veg and roast at 190°C for 90 minutes, basting occasionally.
  4. Rest for 20 minutes before carving.
