Miso & Rosemary Glazed Roast Ham

This Miso & Rosemary Glazed Roast Ham is a punchy twist on a classic centrepiece. The salty depth of miso balances beautifully with sweet honey, while rosemary adds a fresh herby note. Slow roasting allows the glaze to caramelise into a golden, savoury-sweet crust, turning a simple ham into an impressive dish that’s perfect for a smaller gathering, Christmas table spread, or special weekend meal.

If you like a stickier glaze, finish the ham under the grill/broiler for 2–3 minutes – but keep an eye on it, it catches quickly!

  • 1 small uncooked ham (1.5–2kg)
  • 1 tbsp Fools Gold / Meat Tinsel
  • 2 tbsp miso paste
  • 2 tbsp honey (or maple syrup)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 clove garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp olive oil
  • Freshly ground black pepper

Directions

  1. Preheat oven to 180°C (350°F). Line a small roasting pan with foil.
  2. Boil whole ham in water for 20 minutes before draining.
  3. Score the top of the ham in a diamond pattern, being careful not to cut too deep.
  4. Bake the ham in the oven for 30 minutes.
  5. Meanwhile, make the glaze: whisk together the miso, honey, soy sauce, vinegar, garlic, rosemary, olive oil, pepper, and Angus & Oink Fools Gold / Meat Tinsel seasoning until smooth.
  6. Take the ham out of the oven and brush the glaze evenly over the ham, making sure to get into the scored cuts.
  7. Roast uncovered for 30–45 minutes, basting every 10 minutes, until the ham is golden, sticky, and caramelised.
  8. Rest for 10 minutes, then slice and serve.
