Directions

1. Preheat the oven to 200°C (400°F).

2. Boil the potatoes: Place your quartered potatoes in a large pot of salted boiling water. Simmer for about 10 minutes, until the edges start to soften but the potatoes are still firm in the centre. Drain well and let them sit for a few minutes to dry out.

3. Heat the oil: Pour the oil onto a baking sheet, then place in the oven to get nice and hot.

4. Fluff it up and season: Shake the potatoes in the colander to rough up the edges—this creates those irresistible crispy bits. Drizzle over a little extra oil, then sprinkle the spuds generously with Garlic Butter Seasoning, sea salt, and black pepper. Toss everything together until the potatoes are well coated and the seasoning clings to every nook and cranny.

5. Roast: Tip the potatoes onto the hot baking tray and roast for 30-40 minutes, turning halfway, until golden and crispy on the outside with soft, fluffy insides.

6. Garnish & dive in: Mix the parsley and Garlic Butter Seasoning together in a bowl and sprinkle over the hot potatoes for an extra garlicky kick. Serve with our Red House BBQ Sauce on the side for the combo of dreams.

A&O Tips:

  • Use melted butter for a richer flavour or go rogue with duck fat for an extra-crispy finish.
  • Don’t be shy with the Garlic Butter Seasoning it’s what makes these roasties legendary.
  • Want extra crunch? Crank up the heat in the last 10 minutes for a perfect golden edge.
