Pepperoni Pizza Mac n' Cheese

A fusion of pizza and Mac n Cheese can only lead to good things, especially when Major Tom and Italian Stallion are involved! Herby and cheesy with a rich tomato kick, this dish ticks so many boxes but is perfectly at home on those chilly eves when you want to cosy up with something really indulgent.

  • 200g macaroni pasta
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded mozzarella cheese (plus extra to top)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1 tsp Major Tom Seasoning
  • 1 tsp Italian Stallion Seasoning
  • 1 tbsp tomato sauce
  • 150g pepperoni slices (100g chopped, 50g in rounds for the top)
  • Fresh parsley and parmesan to garnish

Directions

  1. Boil the pasta in salted water according to the package instructions. Drain and set aside. Preheat the oven to 180C/160C Fan.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux. Gradually add the milk, stirring constantly, until the sauce thickens. 
  3. Stir in the mozzarella, cheddar, and Parmesan cheese until fully melted and smooth, then add the Major Tom and Italian Stallion Seasoning.
  4. In a large mixing bowl, combine the cooked pasta, cheese sauce, chopped pepperoni, and tomato sauce and mix to combine. 
  5. Transfer the pasta mixture into an oven dish, top with mozzarella cheese and pepperoni slices for that pizza-like finish. Bake for 8-10 minutes until the cheese is melted and bubbly, and the top has a golden, crispy layer.
  6. Garnish with fresh parsley and a sprinkle of extra parmesan, and serve immediately!

For a golden, crispy finish, add a few breadcrumbs on top, with an extra sprinkle of Major Tom before it goes in the oven.
