Phattoush Salad

ingredients

  • 200g Greek or Natural Yoghurt
  • 2 Large Tomatoes, chopped
  • 1 Red Onion cut into rings and then halved
  • 1 Cucumber, diced
  • 2 Spring Onions, finely sliced
  • Handful of Mint
  • Handful Parsley, or Rocket
  • 1 Clove of Garlic
  • Juice of 1 Lemon
  • Olive Oil
  • Black Pepper
  • 1 Tablespoon Phat Taco Sauce

Directions

  1. Chop the tomatoes and finely chop the garlic, finely dice the spring onion, mint and red onion and put into a bowl with the yoghurt.
  2. Split the cucumber in half and use a spoon to remove the soft seeded centre. Cut length ways into 3mm strands and dice finely, adding to bowl.
  3. Squeeze the lemon until the juice runs through your fingers, add a splash of olive oil and a grind of pepper. Sprinkle salt and spoon a dosage of Phat Taco into the mix.
  4. We used up some pitta breads by roasting them in the oven for 10 mins with olive oil and sea salt.
  5. Once they had browned, remove and chop up into bite sized chunks.
  6. Add to the bowl once cooled. Mix up all the ingredients and allow the bread to soak up some of the liquid before eating.
