Pickled Pink Onions

This is a recipe all about onions! Pink and beautiful, you will not believe the colour and flavour these add to any taco dish. It's all about the onion, citrus, zing and a spank of chilli!

ingredients

  • 3 decent sized red onions
  • 70ml good quality cider vinegar
  • I orange, juiced
  • I Lime, juiced
  • 1/2 tsp salt
  • I chilli as hot as you like!

Directions

  • Slice the red onion into rings about 1/2cm wide and separate them into a bowl.
  • Cover with boiling water and leave for 15 minutes to soften.
  • Drain the water off and then add in the remaining ingredients, mixing thoroughly.
  • Put the onions into a sealed container, a pickling jar is best bet and leave overnight in the fridge.
  • Serve with tacos and other Mexican deliciousness!!!
