Pigasus Sprout Nachos

Sprout dodgers, your time is up. These sprout nachos are here to rewrite your winter cravings! Crispy, cheesy, and unapologetically indulgent, this dish combines sizzling pigs in blankets, pan-fried sprouts, and a generous dusting of Pigasus to bring the flavour magic. 
Finished with a cheesy Pigasus sauce and a drizzle of Dirty Barbie and you have yourself an INSANELY good plate of nachos. Resistance is futile friends!

ingredients

  • Pack of Pigs in blankets, sliced into pieces
  • 300g brussels sprouts, trimmed and finely chopped
  • Oil to cook
  • 1 tbsp Pigasus seasoning
  • Large bag tortilla chips

For the cheese sauce:

  • 25g butter
  • 25g plain flour
  • 400ml whole milk
  • 150g grated Monterey Jack cheese
  • 1 tbsp Pigasus seasoning

To finish:

  • Jalapenos
  • Dirty Barbie BBQ Sauce
  • Crispy bacon pieces

Directions

  1. Sprinkle the pigs in blankets with Pigasus and pan fry until golden and sizzling, remove and set aside, keeping them warm. Add the sprouts into the same pan, frying in the meat fat until cooked through and nicely coloured.
  2. To make the cheese sauce: Melt the butter in a saucepan over a low heat. Stir in the flour and heat gently until smooth and bubbling. Pour in the milk a little at a time, whisking constantly to avoid lumps. Keep stirring until the sauce thickens to a silky consistency. Lower the heat and stir in the cheese until fully melted. Add the Pigasus seasoning and stir to combine. 
  3. Arrange the tortillas on a baking tray and top with the pigs in blankets and sprouts. Add any extra toppings - jalapenos, chives, crispy bacon bits, then drizzle over the cheese sauce and Dirty Barbie to finish.
