Pork Larb

Larb is a classic South-Asian dish bursting with bold, fresh flavours. Juicy minced pork is seasoned with lime juice, fish sauce, and chilli, then tossed with aromatic herbs like mint and coriander. Light, zesty, and spicy, it’s perfect served in crisp lettuce leaves for a refreshing, hand-held meal that’s both vibrant and satisfying. Perfect for a light lunch or healthy dinner. To change things up, try using chicken, turkey or tofu instead.

ingredients

For the larb:

  • 300g ground pork
  • 1 tbsp sesame oil
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp Chinese Salt & Pepper Chilli Seasoning

For the sauce:

  • 1–2 red chillies, finely chopped (adjust to taste)
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tsp sugar / honey / agave
  • Fresh coriander leaves, chopped

For serving:

  • Baby gem lettuce leaves
  • Fresh mint leaves, finely chopped
  • Peanuts, finely chopped (optional)
  • Extra coriander leaves (to taste)
  • Sauce – the remaining ½ of the sauce from earlier as a dressing

Directions

  1. To cook the pork: Heat oil in a pan over medium heat. Add garlic and shallots, sauté until fragrant. Add ground pork and cook until fully cooked, breaking up lumps with a spatula. Add Angus & Oink Chinese Salt & Pepper Chilli Seasoning and mix in.
  2. Season: Mix together sauce ingredients in a small bowl or measuring jug. Remove pork from the heat. Stir in half of the fish sauce, lime juice, soy sauce, sugar and freshly cut chillies. Adjust seasoning to taste.
  3. Add herbs: Mix in chopped coriander and fresh mint leaves.
  4. Serve: Spoon pork larb into lettuce leaves, top with extra herbs and peanuts. Serve immediately.
