Spicy Pork Mince Ramen

Big flavour, zero faff. This bowl brings together miso broth, crispy pork mince revved up with Miso Ramen Noods seasoning, eggs, greens and a hit of spice. We add a kewpie mayo/miso mixture to the stock to create a creamy broth that’s packed with cosy umami flavours. It’s all the slurpy goodness you want on a cold day.

Dash of mirin, 2 tbsp soy sauce, 2 tbsp White Miso Paste, 3 tbsp Miso Ramen Noods Noodle Broth Seasoning., 250g pork mince, 1L (4 cups) good-quality chicken stock, 1 tbsp Mayonnaise, 2 eggs, at room temperature, 200g dried ramen noodles, Bunch bok choi (or greens of choice)

Toppings: 2 eggs, Toasted sesame seeds, Spring onion, Chilli Oil, Miso Ramen Noods Seasoning

Directions

  1. Stir the mirin, soy and 1 tbsp miso paste together in a bowl with 1 tbsp of the Miso seasoning. 
  2. Heat some oil in a pan over a medium heat. Add the pork mince, cooking until nicely browned. Add 2 tbsp Miso Ramen Noods seasoning and stir to combine, then tip over the mirin, soy and miso blend, cooking for an additional 2 minutes. Remove from the heat.
  3. Bring a saucepan of water to the boil over high heat, add the eggs and cook for 6 minutes. Remove, place in cold water to cool, then peel and halve.

In a separate pan heat the stock to a gentle simmer with the remaining 1 tbsp miso paste and 1 tbsp Miso Ramen Noods seasoning. Drop in the mayonnaise and whisk it
