Thai Green Curry

One taste of this curry and you’ll be transported to the heart of Bangkok, the aromas of Kaffir, lemongrass, shrimp and chilli guiding you straight to the night market!


The curry gets its gusto from our Thai seasoning, with fragrant herbs and creamy coconut milk levelling things out for a balanced and authentic curry experience. Rich and creamy, it’s a one pot win that will satisfy those mid week cravings (and prompt you to book that trip to Thailand…)

ingredients

For the Curry:

  • 2 tbsp vegetable oil
  • 2 chicken breasts (or 4 thighs), sliced
  • 2 tbsp A&O Thai Seasoning
  • 3 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1-2 green chillies, sliced
  • 400ml coconut milk
  • 200ml chicken stock
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime

Veggies & Garnish:

  • 1 red pepper, sliced
  • 1 courgette, sliced
  • 100g sugar snap peas
  • Handful of Thai basil or fresh coriander
  • 1 lime, cut into wedges

To Serve:

  • Steamed jasmine rice
  • Extra Thai basil & lime wedges

Directions

  1. Heat oil in a large pan over medium-high heat. Toss the chicken with the Thai Seasoning, then sear until golden. Remove the chicken from the pan and set aside.
  2. In the same pan, fry the onion, garlic, and ginger for 2 minutes until fragrant. Add the green chillies and stir fry for another minute.
  3. Pour in the coconut milk and chicken stock and punch up the heat to reduce slightly. Reduce the heat, stir in the fish sauce, brown sugar, and lime juice. Simmer for 5 minutes.
  4. Throw in the red pepper, courgette, and sugar snap peas. Return the chicken to the pan and let everything simmer for another 10 minutes until the chicken is cooked through.
  5. Stir in fresh Thai basil or coriander just before serving for that final hit of freshness.
  6. Ladle over steamed jasmine rice, squeeze over fresh lime juice, and garnish with extra Thai basil.

You can also:
Add an extra splash of coconut cream at the end for an extra creamy curry
Spice it up with a teaspoon of green curry paste alongside A&O Thai Seasoning
Swap chicken for prawns or tofu for a twist
