Thai Turkey

A fragrant twist on the classic roast, this Thai inspired turkey is infused with bold flavours of lemongrass, lime, garlic, and basil. Rubbed with a zesty Thai seasoning butter and slow roasted to juicy perfection, it's a beautifully aromatic centrepiece with a hint of spice and citrus, perfect for shaking up your traditional roast dinner.

  • Turkey
  • 250g Salted Butter
  • 3 ½ Tbsp Thai Seasoning
  • 1 Lime
  • Drizzle of Oil
  • Salt

 

To stuff:

  • 2 Sticks Lemongrass, slightly crushed
  • 1 Garlic Bulb, halved
  • 4 Limes, halved
  • 2 Bunches Basil
  • 1 Bunch Spring Onion

Directions

  1. Remove turkey from fridge about an hour before cooking and preheat oven to 200°c.
  2. The rough guidelines for cooking turkey is 20 minutes per kilo plus an extra 90 minutes, so depending on size of turkey, cooking times will vary.
  3. In a bowl, mix softened butter with 3 tablespoons of Thai Seasoning.
  4. With a spoon, or finger, separate skin from the breast and add ¾ of the butter under the skin, massaging in. Season skin with oil, lime juice, salt and remaining butter.
  5. Stuff turkey with lemongrass, garlic bulb, limes, basil and spring onion.
  6. Place in the oven for 20 minutes, then turn temperature down to 165°c.
  7. Halfway though cooking time, top up roasting tin with 300ml of boiling water and continue cooking. Once the internal temperature of the breast is about 70°c, remove from oven and leave to rest, ideally for around 1 – 1.5 hours.
  8. Fragrant and slightly spiced alternative to your classic turkey!
