The General Fajitas

Take a classic dish and ramp it up to the next level with a little help from The General! The OG of Angus & Oink. This was the first spice blend we created and it works some serious magic in these fajitas, bringing deep southern flavours to the Tex-Mex party.

ingredients

  • 500g chicken breast or thigh fillets, thinly sliced
  • 2 tbsp The General Tex Mex BBQ Seasoning
  • 2 tbsp oil
  • 3 peppers, thinly sliced
  • 1 large onion, thinly sliced
  • 8 flour tortillas

Optional toppings: sour cream, guacamole, shredded cheese, fresh cilantro, lime wedges

Directions

  1. Marinate the Chicken: In a large bowl, combine the sliced chicken with 1 tablespoon of oil and The General seasoning. Mix well to ensure the chicken is evenly coated, cover and put in the fridge for 30 minutes.
  2. Toss the sliced peppers and onion together with the oil.
  3. Heat a pan over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked and slightly charred. Remove from the pan and set aside.
  4. In the same pan, stir fry the vegetables for 4-5 minutes until cooked.
  5. Return the cooked chicken to the pan, toss everything together and cook for an extra couple of minutes, adding some more seasoning if you like.
  6. While the chicken and peppers are cooking, warm the tortillas in a dry skillet for about 30 seconds on each side.
  7. Spoon the sizzling fajita mixture straight from the pan into the warm tortillas, adding any toppings of your choice. Sour cream, guacamole, cheese, coriander and a squeeze of lime juice are all good bets!
