
The General's Beef & Beetroot Stew

Ingredients
You will need:
- 800g lean diced steak
- 500g carrots, chopped
- 3 sticks of celery, chopped
- 2 red onions, finely sliced
- 2 cloves of garlic, chopped
- 200g beetroot (pre steamed is best, with no added vinegar)
- 20g plain flour
- 15g The General seasoning
- 10g smoked paprika
- 2 tbsp tomato puree
- 2 tbsp worcestershire sauce
- 1 litre beef stock
Method
- in a large bowl, mix The General and smoked paprika with the flour, add the diced beef and coat with the seasoned flour
- add oil (or fry-light if following SW) in a large pan over a medium heat, add seasoned beef, give it a light fry to seal the beef
- meanwhile switch on your slow cooker to high heat, add the chopped onions, carrots, garlic and celery
- once the beef is sealed add to the slow cooker on top of the vegetables (do not clean the pan)
- in the pan add some of your stock to deglaze and get all the tasty bits that have been left behind!
- add the stock from the pan, the rest of the stock, tomato puree, worcestershire sauce to the slow cooker
- slice half the beetroot and also add this to the slow cooker
- cook on low for 6/7 hours, until beef is tender, be careful not to let the beef dry out if using lean beef, check the seasoning and adjust as required
- chop the remainder of the beetroot into eighths and add to stew approx half an hour before serving
We added creme fraiche before serving along with some chopped chives. The stew is a meal in itself, but you could also add some boiled potatoes or crackers on the side if you have hungry people at the table ;)
