Togarashi Oysters Vinaigrette

Togarashi is a popular, versatile Japanese seven-spice seasoning blend containing chilli pepper, sesame seeds, Sichuan pepper, ginger, seaweed and orange. It’s great on oysters - but include it in tuna mayo, noodles, soups and over rice - you’ll love its nutty, citrusy, umami hit.

ingredients

  • 6 fresh oysters, (we got ours from Salt Salutation in Topsham) shucked
  • 2 tbsp mirin
  • 1tbsp dark soy sauce
  • 1 tsp dark miso
  • ½ tsp cider vinegar
  • 1 tsp sesame oil
  • 1 tsp Angus & Oink Togarashi seasoning
  • 1 tsp fresh ginger, finely grated
  • 1 tsp caster sugar
  • Finely chopped chives
  • ½ red chilli, finely chopped 
  • 6–8 radishes, very finely sliced

Garnish options: thin slices of ginger, sliced radish, sliced chilli, sliced spring onion, chives

Directions

  1. Arrange the shucked oysters on their half shells over crushed ice. 
  2. Combine the vinaigrette ingredients until the sugar has dissolved. Pour a dressing of dressing over each oyster and dress with the garnish options.
  3. Enjoy straight away.
