Late night revelry and dancehall jive action can leave a brother all empty inside so fill up on these natty doubles to bring jah senses back. Pillows of fried dough filled with a spicy chickpea curry. Doubles because you put one bread on top of the other like a sandwich! Breakfast welcome!

ingredients

  • 100ml warm water
  • 1/2 tsp sugar
  • I tsp dried yeast
  • 2 1/2 cups plain flour
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1/2 tsp ground black pepper
  • I tsp Tandoori Gold
  • Vegetable oil for frying
  • For the filling
  • 2 cans chickpeas
  • 4 cloves of garlic
  • 5 tsp Tandoori Gold
  • Salt and Pepper
  • Voodoo Mango Hot Pepper Sauce

Directions

  1. Add the warm water, yeast and sugar to a bowl. Set aside and watch for bubbles.
  2. In a large bowl, mix the flour, salt, cumin, black pepper and Tandoori Gold. Once the yeast mixture is starting to activate, add it to the flour mixture and combine to form a firm dough. You may need to add water to suit, about 100ml.
  3. Knead the dough until smooth on a floured surface then place in a warm place with a damp tea towel to rise and double in size.
  4. Drain your chickpeas. In a frying pan add 1 tsp of vegetable oil along with the finely
    sliced onion, cook until softened.
  5. Add garlic, ginger and Tandoori Gold seasoning, 1 tbsp vegetable oil for frying cook 40 seconds.
  6. Add 1/3rd cup water, 1 large yellow onion, 4 cloves garlic, 5 tsp Tandoori Gold, salt & Pepper, and Voodoo Mango Hot Pepper Sauce. Stir in the chickpeas.
  7. Add remaining dry ingredients. Bring to a simmer and cook for 45 minutes, adding water as required to maintain a good sauce.
  8. Once the dough has risen, punch it down and allow to rest 15 minutes.
  9. On a floured surface roll our golf ball sized pieced of dough to approx 5inch diameter. Heat vegetable oil in a deep frying pan or wok to approx 3 inches deep.
  10. Add the dough disks and fry in batches of three until golden brown on both sides. Dry on paper towels.
  11. Add a spoon of the curry mixture to the middle of the fried dough, top with fresh
    chilli, coriander, lime, Voodoo Mango and add another fried dough on top!!!
