Ingredients:
- 1 Kg Pork Belly
- 50 g Angus & Oink Sweet Bones & Bacon
- 200 ml Angus & Oink Glazed & Confused
- 1 Cup Apple Juice
- 60 g Butter
- 60 g Brown Sugar
- 1 Jar Apple Sauce
- 3 Spring Onions, chopped
- Chilli Flakes
- 50 ml Thai Ger Style Chilli Sauce
Directions:
- Using a sharp knife, cut the pork belly into even strips or cubes.
- Place the cut pork belly into a large bowl and fill with apple juice. Leave to marinate for 1 hour.
- Remove the pork belly and place it on a grill rack. Cover the pork belly with Angus & Oink Sweet Bones & Bacon.
- Set the BBQ to 110°C and smoke the pork belly for around 30 minutes.
- Remove the pork belly and place it in a tray. Add 200 g of Angus & Oink Glazed & Confused, butter, brown sugar, and apple juice for moisture. Cover the tray with tin foil and return it to the BBQ for 1 hour and 30 minutes.
- After cooking, remove the tray from heat and take off the tin foil. Glaze the pork belly with the collected sauce and place it back on the BBQ for 5 minutes to form a nice caramelised finish.
- Serve and enjoy!
How to Make the Dipping Sauce:
- Take 1 jar of apple sauce and place it in a bowl.
- Add 6 large tablespoons of Thai Ger Style Chilli Sauce
- Incorporate 2 large tablespoons of Angus & Oink Glazed & Confused.
- Finely chop 3 large spring onions and add to the sauce.
- Adjust the spice level by adding your desired amount of chilli flakes.
Fun Halloween Recipe: Halloween Mummy Meatballs
These Halloween Mummy Meatballs are a fun and spooky dish that will thrill both kids and adults alike! Wrapped in tagliatelle for a ghoulish look, these meatballs are coated with Angus and Oink Major Tom rub for an extra burst of flavour. Pair them with a vibrant sauce made from fresh vegetables for a deliciously frightful feast!
Ingredients:
- 24 premade meatballs (or homemade if you prefer)
- Angus & Oink Major Tom rub
- 2 sticks celery, chopped
- 2 peppers (red and yellow), chopped
- 1 large onion, chopped
- 1 large jar passata
- 50 ml chicken stock
- Tagliatelle
- Googly eyes for decoration
Directions:
- Coat the meatballs in Major Tom rub and place them on a wire rack. Cook on the Traeger at 110°C for around 30 minutes.
- Increase the temperature to 180°C until they are golden brown and looking delicious.
- In a cast iron pot, add the chopped onions, peppers, and celery with a little oil and sauté until softened. Sprinkle in a little Major Tom rub.
- Add the passata and chicken stock, simmer for five minutes, and then blend until smooth.
- Cook the tagliatelle according to the packet instructions. Once cooked, wrap the meatballs in tagliatelle and place googly eyes on top before serving.
Delicious Halloween Recipe: Hella Nashty Halloween Nachos
This dish is a gruesome showstopper for your Halloween table! Featuring smoked pulled chicken topped with a variety of delicious ingredients, these nachos are sure to impress your guests. For the Smoked Pulled Chicken:
- 1 Kg chicken (thighs, breasts, legs, or a mix of all three)
- 50 g Hella Nashty seasoning (can be switched for a less spicy option)
- 200 ml Impressive Rooster Sauce (can be switched out)
Directions:
- Set your smoker up to smoke the chicken.
- Add a little oil to the raw chicken and coat well with your seasoning of choice.
- Place the chicken on the smoker and cook until it reaches an internal temperature of 78°C, perfect for pulling.
- Remove from the smoker and shred the chicken using a fork.
- Mix in your sauce of choice and prepare for the nachos.
- Top with spring onions, grated cheddar, sour cream, and easy guacamole.
For the Easy Guacamole:
- 1 red onion, diced
- 2 avocados, chopped
- 10 cherry tomatoes, chopped
- Juice of 1 lime
- 1 tablespoon of El Jefe seasoning
