Bacon Wrapped Chicken

Indulge in this mouthwatering bacon-wrapped chicken recipe, infused with the smoky flavours of Hook Line & Sinker rub. Stuffed with creamy manchego cheese and sun-dried tomatoes, this dish is perfect for a weekend barbecue or a special dinner.

  • Hook Line & Sinker Rub (to taste)
  • 10 rashers of streaky bacon
  • 2 large chicken breasts
  • 100g manchego cheese, sliced
  • 10 sun-dried tomatoes, chopped
  • Your favourite veggies for roasting (e.g., bell peppers, courgettes, onions)
  • Handful of new potatoes
  • Olive oil (for drizzling)
  • Salt & pepper (to taste)

Directions

  1. Marinade the chicken breasts in advance. A few hours is fine, but if possible, leave them for 24 to 48 hours for the flavours to really penetrate the meat. Season generously with the delicious Hook Line & Sinker rub and place in a zip-lock bag or sealed container in the fridge.
  2. Preheat your oven to 180°C.
  3. Butterfly each chicken breast and place half of the manchego cheese and chopped sun-dried tomatoes in the middle of each breast.
  4. Wrap each chicken breast tightly in streaky bacon and place in a BBQ (or oven-proof) dish.
  5. Add your favourite veggies and new potatoes around the chicken. Drizzle with olive oil and season with salt and pepper.
  6. Roast in the oven until the chicken reaches an internal temperature of 75°C and the vegetables are nicely roasted, about 30-40 minutes.
  7. Serve with your favourite beer or wine—because why not?
