Bang Bang Chicken with Rice Noodles

A quick to prep, flavour packed dish that offers a bit of everything. The chicken is poached in a Satay seasoned broth for a next level flavour and that lovely pull apart texture. Throw in some fiery chilli, crunchy veg and a rich satay sauce and you have a deliciously nutty (and just the right amount of spicy) no-fuss dinner.

ingredients

  • 100ml chicken stock
  • 2 tbsp Satay Seasoning
  • 3cm piece ginger, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp runny honey
  • pinch crushed chillies
  • 1 lime, juiced
  • 2 chicken breasts
  • ½ cucumber, peeled into ribbons
  • 1 large carrot, peeled and thinly sliced
  • 4 spring onions, diagonally sliced
  • 1 red chilli, thinly sliced
  • 300g fresh rice noodles
  • 20g fresh coriander, roughly chopped

For the Satay Sauce:

  • 2 tbsp peanut butter
  • 100g coconut cream
  • 2 tbsp soy sauce
  • 1 heaped tsp Satay Seasoning
  • 1 tbsp honey
  • Juice of 1 lime

Directions

  1. Place the chicken into a pan with the chicken stock, satay seasoning, ginger, honey, sesame oil, soy and lime juice. Bring to the boil, stirring continually, and simmer for 10-12 minutes until the chicken is tender and the broth is thickened and smooth. Remove from the heat and set aside.
  2. Combine all of the ingredients for the satay sauce in a pan and bring to a low simmer.Heat gently until thickened.
  3. Shred the chicken and add it to a serving bowl with the cucumber, carrot, spring onions,red chilli, rice noodles and some of the cooking broth. Toss to mix, drizzle over the satay sauce and serve sprinkled with coriander.
