Blackened Salmon & Rice

Blackened fish definitely has it's roots in Cajun cooking so it was only right we brought our our fantastic Cajun Seasoning for this recipe!

We served the Blackened Salmon on a delicious bowl of cajun rice jam packed with shrimp, and gammon pieces too!

ingredients

  • Two salmon fillets, skin on, fully dried with a paper towel
  • Cajun Seasoning
  • 1 packet of ready cooked rice 
  • 1 Red Pepper, Chopped 
  • 1 White Onion Chopped 
  • 100g of cooked gammon, cubed 
  • 175g cooked prawns 
  • 125 ml chicken stock 
  • 4 garlic cloves, minced 
  • 2 doing onions finely sliced 
  • Salt & pepper to season

Directions

FOR THE RICE

  1. Soften the onions in a little olive oil then add your garlic and peppers cookout for a few minutes
  2. Next add your rice, gammon, chicken stock and 1 tablespoon of Cajun seasoning and cook for a further 5 minutes
  3. Add prawns, salt and pepper to taste and heat while you get your salmon cooked! Once warmed through remov from heat and add your spring onions.
  4. Mix 1 tsp of Cajun Seasoning with 1 tablespoon of vegetable oil
  5. Coat the salmon in the seasoning & oil mix
  6. Cook for 5 minutes in a hot pan and then immediately place under a very hot grill until skin blackens and crisps up. Remove and add to the rice!
