Breakfast Potacos

If you love tacos and a cooked breakfast then these are for you! A super fun and tasty way to start the weekend, the delicious hashbrown becomes the taco, an epic tasting carrier to bring the delicious breakfast filling of your choice to you!

ingredients

FOR THE POTACO

  • 1 tbsp Big Texan rub
  • 3 large Maris piper potatoes grated
  • 2 spring onions Finley sliced
  • 2 eggs beaten
  • 125g grated cheddar cheese

FOR THE FILLING (CAN BE ADJUSTED TO YOUR OWN TASTES)

  • Good quality sausage meat
  • Streaky bacon
  • Eggs beaten
  • Green bell pepper finely diced
  • Red dawg hot sauce

Directions

  1. You can cook these either in an oven or griddle/frying pan. If using an oven pre heat to 200c and oil baking sheets with parchment paper.
  2. Grate your potatoes and wash through to remove as much starch as possible to avoid it becoming too sticky and stodgy. 
  3. Once potatoes are drained place them onto a tea towel and cover and squeeze out as much water as possible from them and place into a large bowl.
  4. Add the grated cheese, egg spring onion and big Texan rub and carefully mix all together until evenly distributed. 
  5. If using the oven place a handful onto the parchment paper and squash down flat into round taco shapes and cook for around 20 mins. Once cooked leave on tray to cool whilst filling cooks.
  6. If using a griddle heat a little oil on to the flat surface and place a handful into the oil and using a spatula flatten down into a circle taco shape and cook until browned and flip. Remove from heat and leave to cool whilst the filling is cooking.
  7. The best thing about the filling is this can be customised to your taste or what you are craving. 
  8. For me I used black pudding and apple sausages skinned and I chopped them roughly when on my plancha. I cooked streak bacon until crispy and when both where almost ready I added whisked up egg with the diced green peppers and cooked through. 
  9. Now the fun bit building the potacos. I added the green peppers and egg then a strip of crispy bacon and topped with some chopped sausage meat and a healthy drizzle of hot sauce.
