Elite Easter Elotes!

If there’s one street food that knows how to stop people in their tracks, it’s elotes. Charred corn on the cob, smothered in a pumped up A&O seasoned mayo and finished with a snowfall of toppings. This is Mexican street food at its absolute best: messy, delicious and totally moreish. 

We’ve suggested four ways to enjoy elotes below but you are the master of your own flavour destiny. Simply line up your mayo, seasonings and preferred toppings and get experimenting.

 

 

ingredients

  • Corn on the cobs
  • Tub of mayo (allow 1 tbsp per cob)
  • Choice of seasonings (we used Buffalo, El Jefe, Garlic Butter and Monster Dust) allow 1 tsp of seasoning per 1 tbsp of mayo. 
  • Toppings: feta, parmesan, red chilli, crispy chicken skin, coriander, lime wedges, flamin hot cheetos

Directions

BUFFALO

  1. Cook the corn in some oil until charred, turning often
  2. Smother in Mayo seasoned with buffalo and smooth over the corn
  3. Sprinkle over crispy chicken skin

EL JEFE

  1. Cook the corn in some oil until charred, turning often
  2. Smother in Mayo seasoned with el jefe and smooth over the corn
  3. Sprinkle over feta, chilli and coriander
  4. Serve with lime wedges

GARLIC BUTTER

  1. Cook the corn in some oil until charred, turning often
  2. Smother in mayo seasoned with garlic butter and smooth over corn
  3. Scatter over parsley and feta
  4. Serve with lime wedges

MONSTER DUST

  1. Cook the corn in some oil until charred, turning often
  2. Smother in mayo seasoned with Monster Dust and smooth over corn
  3. Roll in crushed flamin hot cheetos for an extra kick of heat
