Greek Souvlaki

Our Big Phat Greek Seasoning is packed with quality oregano, lemon, rosemary and cinnamon – it’s a tub of Mediterranean sunshine.

Create your own Souvlaki at home (our favourite!) using the rub mixed with olive oil, lemon and tomato – finish with our lip-tingling Red Pepper Hot Sauce, Red Dawg.

ingredients

  • 1 Kg chicken thigh fillets
  • 30g chopped tomatoes
  • 1 lemon (juiced)
  • 30g Big Phat Greek seasoning

Tzatziki:

  • 1 cucumber
  • 1 lemon (juiced)
  • Natural yogurt
  • Optional herbs lemon balm, fennel

Garnish:

  • Flat breads
  • Olives
  • Red onion
  • Tomatoes
  • Herbs

Directions

  1. Slice up the chicken thighs to fit on kebab skewers.
  2. Add them to a bowl with the seasoning, a slug of olive oil, the juice of a lemon and the sun dried tomatoes. Do this at least an hour before cooking or even overnight to absorb more flavour!
  3. Thread onto skewers and cook over hot charcoal with wisps of woods smoke until 75ºC (internal temperature). You could also do this in a grill oven!
  4. For the cucumber tzatziki, slice the cucumber along its length and scoop out the soft center with a spoon. Finely dice the cucumber and add to bowl.
  5. Add yogurt, lemon juice and fresh herbs as you like (parsley, chives, oregano). Season with salt and pepper.

A few flat breads, a pot of olives and a tomato salad are all you’ll need to finish this off as a fantastic meal with holiday vibes. A drop of Red Dawg Apache hot sauce for a spicy hit and a cold beer make this a winning dinner for the weekend!!
