Honey BBQ Chicken with Mac n’ Cheese

This will store well in the fridge for around 3 days so you can get ahead of the week and pull out a portion when you’re chasing something tasty.

For the Chicken:

  • 4 chicken thighs or breasts
  • 2 tbsp Honey Chilli Seasoning
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 4 tbsp BBQ sauce

For the Mac n’ Cheese:

  • 300g macaroni pasta
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 500ml milk
  • 150g cheddar cheese, grated
  • 50g mozzarella cheese, grated
  • 1 tbsp Mac Daddy Seasoning
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 200°C/180°C Fan.
  2. Rub the chicken with oil and the Honey BBQ Seasoning, then place in an ovenproof dish and roast for 20 minutes.
  3. In a small bowl, mix the honey and BBQ sauce, brush over the chicken and return to the oven for 10 more minutes until caramelised and cooked through.
  4. Cook the macaroni according to the package instructions. Drain and set aside.
  5. In a saucepan, melt the butter over medium heat and stir in the flour to make a roux. Gradually whisk in the milk and cook until the sauce thickens.
  6. Stir in the cheddar and mozzarella cheese until melted, then whisk in the Mac Daddy Seasoning.
  7. Mix the cooked macaroni with the cheese sauce. Transfer to a lunch container with the sliced honey BBQ chicken and drizzle over the BBQ sauce when ready to eat.
