Honey Chilli Chicken

Pair sweet & sticky honey chicken with fluffy rice and crunchy spring onions and only good things can happen. We cook it in the oven to get a great colour on the chicken and muddle the marinade together the night before to max out those flavours. A cracker of a dish!

ingredients

Honey Chilli Marinade:

  • 4 tbsp honey
  • 3 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tbsp tomato paste
  • 3 large cloves of garlic, minced
  • Squeeze of lemon juice
  • 1.5 tbsp Honey Chilli Seasoning
  • 6 chicken thighs, chopped into chunks
  • Pinch of salt and pepper

To serve:

  • 1.5 cups sushi rice, cooked
  • Sliced spring onions
  • Toasted sesame seeds

Directions

  1. Mix the marinade ingredients together in a bowl, add the chicken and allow to marinate overnight (or 3 hours minimum), taking it out 30 minutes before cooking. 
  2. Preheat the oven to 180C. Place the chicken and marinade in an oven dish, sprinkle with a little more honey chilli seasoning and roast for 25 minutes.
  3. Baste the chicken in the honey chilli juices, cover with foil and bake for another 25 minutes. 
  4. Serve with rice, sliced spring onions and toasted sesame seeds.
