We like this video of Jamie Oliver as a how to reference!

  • Place the lamb mince in a bowl and season with Schwarma and Baharat rubs. Combine the mince and spices by hand, cover with clingfilm and place in the fridge overnight.
  • Remove the mince from the fridge and bring to room temperature. Take handfuls of mince and shape them around wooden or metal skewers, forming a sausage shape with your hands. Repeat until you have no more kofta mix left then place to one side.
  • To make the flatbreads, combine all of the ingredients in a bowl then portion into 4 balls. When you are ready to grill them, roll them out as wide a possible then grill them for a minute or two either side until light and fluffy.
  • Place the skewers on the grill and cook them for 5-10 minutes, turning as you cook. Use tongs as the meat meat fall apart.
  • Slice up the lettuce, onions and tomatoes for garnish.
  • Serve the salad and Kofta in the flatbread, drizzle with natural yoghurt and hot sauce if you fancy.
