Maple Garlic Glazed Salmon

Succulent salmon with a sweet, smoky hit, this glazed fish dish has a brilliant depth of flavour that’s a hit for a special dinner or BBQ cookout. Serve with dill, pickled cucumbers, lemon wedges and a Hook, Line & Sinker infused mayo for a winner dinner.

ingredients

  • 1 side of salmon (skin on, around 1.5 kg)
  • 2 tbsp Hook Line & Sinker seasoning
  • 3 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • Juice of 1 lemon
  • Fresh parsley for garnish

For the mayo – 2 heaped tbsp mayo mixed with 1 tbsp Hook Line & Sinker seasoning.

Directions

1. Prepare the glaze: In a small bowl, whisk together the maple syrup, olive oil, soy sauce, and lemon juice until you get a sticky glaze.

2. Season the salmon: Lay the salmon skin side down, on a large baking tray. Rub the salmon with the Hook Line & Sinker seasoning, making sure to coat it generously for a punchy flavour hit.

3. Glaze: Brush the maple garlic glaze over the top of the salmon, ensuring the entire surface is coated.

4. Cook: Preheat the oven to 180°C (350°F). Bake the salmon for 15-20 minutes, basting with the remaining glaze halfway through, until the fish is flaky and cooked through.

5. Serve: Remove the salmon from the oven and let it rest for a few minutes. Serve with your choice of sides, the Hook, Line & Sinker mayo and any leftover glaze for an extra dose of sweetness.
